The Sweet Taste of Springtime
- 1½ oz No.11 GIN
- 1 egg white
- 1 oz rhubarb syrup*
- ½ oz fresh lemon juice
Add all ingredients to a shaker with 1 cup of ice and shake vigorously for 2 minutes to create a thick foam. Strain into glasses and garnish with a shaving of fresh rhubarb (trim ends of rhubarb and peel a strip using a potato peeler).
Makes 2 small coupe glasses – a smaller serving ensures your drink stays cold, foamy and delicious to the end.
*RHUBARB SYRUP: Simmer 1 cup of maple syrup, 1 cup of water and 5-6 chopped stalks of fresh rhubarb together for 20 minutes. Strain into a glass jar or bottle and store in the refrigerator.
